Ingredients:
- chicken tenders or you can cut them up and make chicken nuggets
- 1 bag of plain pork rinds
- seasoned salt
- garlic powder
- onion powder
- 1 cup of mayo
- 2 or 3 table spoons of mustard
- Extra Virgin Olive oil for frying
Instructions:

Crush your pork rinds very well in a food processor or just beat the crap out of the bag! Ha! Dump them into a bowl.

Now mix in all your seasonings in the pork rinds. Use a lot of seasoning!
- In another bowl mix mayo and mustard.

In batches, dip the chicken into the mayo mix, then the pork rinds.

Heat about an inch of EVOO in a skillet over medium-high heat. Fry the chicken in batches until golden brown. A couple of minutes per side should be sufficient.

Drain on paper towels.

Serve immediately.
SO GOOD! And basically NO carbs!
I didn't list exact measurements on seasoning, but I will say, SEASON LIBERALLY.
(That means use a lot of seasoning!)
