Keto Chicken Strips!



Ingredients:
  •  chicken tenders or you can cut them up and make chicken nuggets
  • 1 bag of plain pork rinds 
  •  seasoned salt
  •  garlic powder
  • onion powder 
  • 1 cup of mayo 
  • 2 or 3 table spoons of mustard
  • Extra Virgin Olive oil for frying 


Instructions:
  1. Crush your pork rinds very well in a food processor or just beat the crap out of the bag! Ha!  Dump them into a bowl.
  2. Now mix in all your seasonings in the pork rinds. Use a lot of seasoning!
  3. In another bowl mix mayo and mustard.
  4. In batches, dip the chicken into the mayo mix, then the pork rinds.   
  5. Heat about an inch of EVOO in a skillet over medium-high heat. Fry the chicken in batches until golden brown. A couple of minutes per side should be sufficient.
  6. Drain on paper towels.
  7. Serve immediately.


SO GOOD! And basically NO carbs!


I didn't list exact measurements on seasoning, but I will say, SEASON LIBERALLY. 
(That means use a lot of seasoning!)

Low carb Stuffed Bell Peppers!

Ingredients

    1 cup of your favorite salsa (make sure to check sugars in this!)
    1 cup of brown rice
    6 Bell Peppers
    1 package of taco seasoning
    1 lb of Ground Turkey
    Shredded Cheese





Directions
Cook Ground Turkey and taco seasoning in skillet while the rice is cooking in a pot. I also added green onions and some diced celry to the turkey  because I had it.  Once  the turkey is cooked add 1 cup salsa and rice and mix together.


Cut tops of Bell Peppers, remove all seeds, and wash them well. A lot of people like to boil their peppers first, I personally don't.




Fill up bell
peppers with the meat mixture. Left over meat mixture, put around bell peppers and top with shredded cheese! Cover with foil and bake for 30 minutes! 

 

I always forget how much I love stuffed peppers! Enjoy!

Friday Favorites! {08-03}

 
 
 
 
It's FRIDAY and since I haven't done a Friday Favorites post in a while, I thought I'd share one with you.
 
 
 
 
 
 
Up first- this eyeliner I scored at Sally's for $3.99. Its waterproof and amazing!!! Its long lasting and doesn't smear. Its the best eyeliner I've ever used! 


 
 
 
 
 
 
 
My biggest girl, Rilyn, wrote this note for the tooth fairy.
I know one day I'm gonna miss these days, so stuff like this is definitely a favorite of mine!

 
 
 
 
 
 
 
 
A couple of weeks ago this girl competed in Nationals  in Galveston and she and her team got 3rd!
 

 
And then the very next week she competed in her very last 8U softball tournament ( an all night tournament) and came home CHAMPIONS! What a great way to end her 8U season, bring on 10U!
 


 
 
 
 
 
 
 
We also recently celebrated Josh's 32nd birthday with a family dinner.

 
 
 
 

Ball Park days- Ahhh!
Recently Josh played in a benefit Ragball Tournament and we spent the day cheering him on and hanging out at our favorite place- the ball park!

Kid Approved Spinach Lasagna Rolls!

Spinach Lasagna Rolls 
 
 
  • 1 box of lasagna noodles, cooked (next time we are trying it with wheat noodles!)
  • 10 oz frozen chopped spinach, thawed and drained
  • 1 large tub of   Ricotta Cheese 
  • 2 cups of Italian Blend Cheese (Also called Pizza Blend)
  • 1 large egg
  • salt, pepper, garlic powder to taste
  • 1  jar of  Organic Pasta Sauce (check the sugars and make sure it is low or no sugar)





Directions:
Preheat oven to 350°. Combine spinach, ricotta, Italian blend cheese, egg, salt, pepper, and garlic powder in a medium bowl. Ladle about 1 cup sauce on the bottom of a 9 x 12 baking dish.
Place a piece of wax paper on the counter and lay out lasagna noodles. Make sure noodles are dry. Take 1/3 cup of your cheese mixture and spread evenly over noodle. Roll carefully and place seam side down onto the baking dish. Repeat with remaining noodles.
Pour the remaining sauce over the noodles in the baking dish and top each one with mozzarella cheese. Cover with foil and bake for 30 minutes, or until cheese melts.
 



 
 
This made A LOT. It fed my family of 6 with leftovers. We all LOVED it!
 
I served it with a side salad!
 
 
(And FYI- we all HATE spinach and we loved it!)
 
 
Also- if you are doing low carb like me, stuff this filling in a chicken breast and top with the pasta sauce and cheese!!! SO good!!!

Hangry Roxie: Tips for Livin' a low carb life!

 
 
Since I finally posted some progress pictures a few weeks ago I've had a lot of people message me and ask me what I am doing so I thought I'd share how I, along with exercise, am trying to live a low carb life!
 
 
One reason I love low-carb diets is because they have been known to help reduce cravings and burn fat more efficiently. This type of diet forces the body to burn fats rather than carbohydrates.


When I decided I wanted to get healthy I knew I wanted to go low carb.


Listen- it does work when its done it right, but ,like most of you I am not as consistent as I should be.

I am trying hard to make this a 'life-style change' as opposed to just constantly watching the scale as I would on any of other diet.


I’m sure that some of you struggle with wondering what to eat or how a low carb diet works, so let me help you out with some tips that I have learned on my long, long, loooooong journey as a professional yo-yo diet-er.
 
 

Here are some helpful tips:
 
 
Don't skimp on healthy fat.
Eat when you're hungry.
Keep the focus on real food (keep processed food to a minimum!). 
Remember- weight loss is 20% exercise and 80% nutrition. 
Count carbs not calories.
 
 
 Now, lets look at food!
 
I am NOT a low carb expert, but I personally focus my diet around eggs, meat, green vegetables, and some cheese, but that's not all.
 
 
Which fruit can you eat?
 
Watermelon. This fruit has the lowest carb count. Strawberries is also another lower carb choice, too.
  
BANANAS ARE A NO!
 
 
What foods do not have carbs?

 
Eggs! Eggs are life! Literally- they are so good for you!
 
 
Beef! Beef is highly satiating and loaded with important nutrients like iron and B12.
 
 
Of course don't forget chicken, pork, lamb, and most fish. Basically your a carnivore now, haha!
 
  
 Is peanut butter good? 
 
It is high in protein and healthy fats. Peanut butter is the perfect snack for anyone following a low carb diet. You can have it on its own or mixed into a protein shake,  its up to you. Be sure you get a 100% natural peanut butter with no added salt, sugar, or oil.
 
 Is a sweet potato a carb?
 
The same amount of white potatoes and sweet potatoes contain about the same amount of carbohydrates (1/2 cup = 15 grams of carbs). Sweet potatoes, however, have more fiber and are slightly lower on the glycemic index than white potatoes. I personally stay away from potatoes unless I'm cheating. 
 
 
Now to the important question- how many carbs do you need to lose weight?
 
 According to Google, if you eat a 2000-calorie diet you should aim for about 200 to 300 grams of carbs per day. But if you need to lose weight, you will get much faster results eating around 50 to 100 grams of carbs. Most days I prefer to keep my carbs under 25 if I can that helps insure that my body is in ketosis and is burning fat.
 
 
 
How long does it take to get your body into ketosis and what is ketosis?


Your body can only store a two-day supply of glucose in the form of glycogen, so after two days of consuming no more than 20 grams of carbohydrates, most people go into ketosis.
 
 
 Ketosis is when the body produces ketone bodies out of fat and uses them for energy instead of carbs. You can get into ketosis by following a very low-carb, high-fat diet.


When you first start a low carbohydrate diet, your weight will drop FAST as your body sheds storage glycogen and all the water that the storage carbohydrate sucks up like a sponge. So if your goal is weight loss, life is great for the first couple weeks as you should drop anywhere from 5-20 pounds, depending on your starting weight. (This is exactly what happened to me!)

And then the weight loss stops. (Also me!)
 
In most cases, this is the point where people throw up their hands, get disappointed, and become convinced that eating low carb isn’t working. That's when they quit and go in search of a donut shop. (Also me, again.)

Its difficult to stick to any type of diet, but that doesn’t mean you have to give  up! If you fall off the wagon (like I do frequently) just get back on.
 
 
Like me, I was off for our entire vacation and so I am basically starting over. #yay #sofun #sarcasm #thissucks
 

If you stick with a low carbohydrate diet, the weight loss will gradually continue to come off, especially if you include days where you allow your body’s storage carbohydrate levels to be re-filled. YES- occasional cheat meals will help you!


This is important.
 
 
Long-term carbohydrate deprivation leads to a complete depletion of your body’s storage glycogen levels and a decrease in your metabolic function and other issues, too.
 
 
I hope that these low carb diet tips helped you become more knowledgeable on what has worked for me.
